Right Material
Selecting vermicompost or vermicompost tea based on soil condition and management objectives.
-
Right Rate
Applying biologically appropriate quantities that support microbial function without overloading the system.
-
Right Time
Aligning applications with plant growth stages, environmental conditions, and soil biological activity.

This mix is designed for chefs, home cooks, and food professionals who value diversity, performance, and integrity in their ingredients.
What You’ll Receive
Each Chef’s Variety Mix includes four distinct mushroom varieties drawn from our current harvest, which may include:
-
Oyster mushrooms (blue, pink, yellow, or pearl) — prized for their delicate texture and adaptability
-
Lion’s Mane — known for its dense, meaty structure and subtle seafood-like profile
-
Pioppinos — firm-stemmed with a nutty, earthy depth
-
King Trumpets — thick, sliceable, and ideal for grilling or roasting
-
Seasonal specialties — selected based on availability and optimal maturity
Selections rotate weekly to reflect natural growing cycles and to highlight the full diversity of our gourmet collection.
Why This Mix Is Different
-
Truly farm-curated: You receive what is best this week, not what is easiest to produce.
-
Flavor-driven selection: Each variety is chosen for contrast in texture, taste, and cooking application.
-
Harvested fresh: Picked at peak maturity for optimal shelf life and kitchen performance.
-
Traceable and transparent: Grown entirely in-house at Lion Farms using regenerative methods.

Lion’s Mane is one
of our specialties.
From inoculating each bag in our lab to guiding every stage of fruiting, we cultivate this mushroom entirely in-house—shaping its structure, density, and quality from the very beginning. What you see growing here reflects a process rooted in precision, patience, and respect for the organism itself.
