Located in the Redlands, south of Miami, our gourmet mushrooms are cultivated in a 10,000 sq. foot Controlled Environment Agricultural (CEA) Building. Our state-of-the-art facility ensures an environment that optimizes temperature, humidity, lighting and air quality, growing high-quality healthy culinary and medicinal mushrooms.
Our organic regenerative farm combines the principles of sustainability, environmental stewardship and high-quality mushroom cultivation. Our farm strives to create a harmonious balance between nature and technology, providing a large scale reliable and eco-conscious source of gourmet mushrooms year-round.
LION'S
MANE
Texture and Flavor: Tender and chewy with a mild, sweet seafood flavor, reminiscent of scallops, lobster, or crab. They make a great accompaniment or alternative to seafood.
Culinary Uses: When cooked, lion's mane mushrooms can take on flavors from other ingredients in a dish, making them versatile for various culinary applications. Great for stir-fry, skewers, risotto, pasta, soups & broths, tacos, gourmet burgers, etc.
BLUE
OYSTER
Texture and Flavor: Visually striking and flavorful. Tender and delicate texture. Mild, sweet, and slightly peppery flavor profile with subtle earthy undertones.
Culinary Uses: When cooked, they maintain their firmness and develop a rich, savory taste that complements a variety of dishes. Very versatile and can be used for sautéing, stir-frying, grilling, roasting, and incorporating into soups, stews, pasta dishes, and risottos. Blue Oyster pairs perfectly with the rich taste of butter or the fruity flavor of olive oil.
GOLDEN
OYSTER
Texture and Flavor: Golden oyster mushrooms have a delicate and velvety texture that becomes tender when cooked. Fruity aroma and when cooked they have a balanced nutty flavor similar to cashews. Golden Oyster mushrooms are great for sauces due to their velvety texture and subtle cashew flavor.

BLACK KING
OYSTER
Texture and Flavor: The Black King Oyster mushroom tastes more dense and meatier than the typical oysters. The caps are a little smaller than the stem. Both are edible. Chefs prefer their complex, sweet flavor.

Versatile for many applications, including slicing and grilling, roasting whole, stir-frying, braising, and incorporating into soups, stews, pasta dishes, and risottos.
